Guacamole – Ready to make your own?!

This morning has started out to be kind of rough but, I am pushing through because I know this day must get better from here. : )
I promised several of you I would post this recipe and I didn’t want to leave you waiting any longer!

Guacamole. The goodness that is avocado, lime juice, salt & onions essentially. Throw just that together and it’s pretty great! For most of my life I actually refused to try avocado or guacamole because … i don’t know why. I think it’s because the texture threw me visually. One birthday party at a local Mexican restaurant we went to and had table side guacamole. It was phenomenal.

I went back often and sometimes I would just order a massive amount of it and that’s all i ate. : )

So, after watching them make it for many many times i started making it myself. It’s super easy & really healthy since Avocado is a good fat.

I hope you’ll make it and tell me how much you love it!! This makes enough for 2 to really dig into or 4 if you have other appetizers to share but, it can easily be doubled or halved if you choose!

You need:

  • Two ripe Avocados – I try to buy them the day of and I want them to be brown and softer.
  • One Roma Tomato – seeded/diced.
  • 1/4 of a red onion finely diced unless you like it chunkier and you can cut them larger
  • 1/4 Cup chopped Cilantro -no stems please
  • 1-2 small limes (to taste)
  • salt (I usually use 1/2 teaspoons but, you make it to your liking)
  • 1 garlic clove minced
  • 1 jalapeño -seeded and chopped (Or not if you like it spicy!)

 

Take Avocados and scoop their contents into the bowl. Immediately squeeze with juice of at least half a lime and add some salt. Begin using a spoon and mushing it up; I like to leave it chunky but, if you prefer smoother guacamole then keep mixing until you’re reached your happy place.

 

Then, add in onions, garlic, remaining salt, cilantro & more lime juice to taste. When all of this is blended in you will add your tomato. Mix in gently because if you mush them or beat them t much it will water down the glorious guacamole you’ve now made!

That’s it! You just make some badass restaurant quality Guacamole & you just need to add chips and you are probably going to sit down and eat the whole thing. It’s that good and it’s so fresh and tasty!

 

It can keep couple days covered in the fridge just note that it will start to brown but, still taste great!
